“As we were prototyping Aphrodise, I sent 91 bottles to a private island near Ibiza for a dear friend’s 4-day birthday celebration. The guests were a worldly bunch who knew their drink. I knew we had a hit on our hands when they started hoarding bottles in their rooms on Day 2!”

While building out his restaurant Mykonos Steak Club, a 320-seat venue on Grand Cayman’s Seven Mile Beach, Schilling realized that it would be a struggle to find large quantities of sparkling wine to supply all those mimosas at brunch. Thus, Aphrodise was born.
